Sun dried tomato & zucchini frittata
Ingredients
- 2 eggs
- 1 tablespoon water
- 1 medium zucchini, grated
- 1 green onion, finely sliced
- 1 tablespoon low-fat semi-dried tomatoes
- 1 dessert-spoon finely sliced green olives
Method
In a bowl, beat eggs and water together, then stir in other ingredients. Gently heat small non-stick pan gently, then tip in egg mixture and cook gently until set. Add salt & pepper to taste.
