Stir Fried Vegetables
Ingredients
- 1 celery Stalk, finely sliced
- 1/2 cup of bean sprouts
- 1 onion, finely sliced
- 1 carrot, cut into Julienne
- 1 red capsicum, cut into Julienne
- 1 cup of snow peas
- 1/2 cup sugar snap peas
- 4 mushrooms
Marinade:
- 2 tablespoons splenda
- 1/2 teaspoon fresh ginger
- 1/2 teaspoon fresh garlic
- 1/4 cup Tamari (Japanese soy sauce)
- 1 stalk lemongrass
- 1/4 cup water
Method
Gently fry onion in a wok with 2 tablespoons of water until soft. Add the carrots, celery and capsicum and sautee until tender. Add remaining vegetables and toss to combine. Place marinade ingredients into a food processor and blend until combined. Pour marinade over vegetables and stir to combined.
