Roasted Tomato, Onion & Garlic Salsa


Ingredients
  • 1 kg ripe tomatoes, cored and chopped
  • ½ brown onion, chopped
  • 1 head garlic, peeled and chopped
Method

Place all ingredients into a roasting pan and sprinkle with salt and pepper. Roast at 150C for 45 minutes until vegetables are soft. Squash together and serve with beef, lamb, fish or chicken. This can be kept in the fridge for up to 1 week. Reheat in microwave.
