Grilled Lamb with Ratatouille

Ingredients
  • 120g lean lamb steak
  • 1 small can tomatoes,chopped
  • 1 small eggplant,chopped into 2 cm cubes
  • 1 zucchini, sliced into rounds
  • ½ brown onion, chopped
  • ½ red pepper, chopped into 2 cm chunks
Method

To make ratatouille, heat a non stick pan. Gently sauté onion until soft. Add eggplant and red pepper, cook for 5 minutes. Add zucchini and tomato. Simmer for 15 minutes. Season with salt and pepper. Meanwhile barbecue or grill the lamb. Serve with the ratatouille.
