Curried Lamb Cutlets

Ingredients
  • 2-3 lean lamb cutlets
  • 2 teaspoons curry powder
  • 1 teaspoon ground coriander
  • 1 clove garlic, crushed
  • 2 cm fresh ginger, peeled and grated
  • 2 tablespoons fat free plain yoghurt
Method

Mix all ingredients except lamb together. Spread over lamb cutlets, cover and leave to marinate preferably for 3 hours. Heat a non-stick pan and gently fry half a chopped onion. Add cutlets, 2 chopped tomatoes and a little water. Cook until lamb is ready, turning cutlets once.
