Curried Vegetables


Ingredients
  • ½ onion, cut into chucks
  • 1 carrot, in 2cm slices
  • 1 stalk celery, in 2cm pieces
  • 1 up cauliflower, in pieces
  • ½ cup broccoli, in pieces
  • ½ cup green beans, in 5cm pieces
  • 2 teaspoons mild curry paste
  • 1 cup vegetable stock
Method

Heat a non-stick pan, add onion and cook for 1 minute. Stir in curry paste, add carrots, celery, cauliflower and stock. Cover and simmer for 5 minutes. Add broccoli and beans and cook for 3 minutes. Serve.
