Asian Chicken Dumplings in Broth

Ingredients

  • 2 cups chicken stock
  • 2 cups water lemongrass – 5cm piece, finely chopped
  • ginger – 1cm piece, finely chopped
  • small red chilli, finely chopped
  • 1 tablespoon soy sauce
Method

Make broth by combining these ingredients in large saucepan. Bring to boil then simmer for 5 minutes.

Make chicken dumplings by combining:
  • 120g chicken mince
  • 1 teaspoon chopped fresh coriander
  • ½ clove garlic, crushed
  • Shape into walnut sized balls, and add to broth. Simmer for 10 minutes.
Add:
  • ½ tablespoon lime juice
  • ½ tablespoon fish sauce
  • 200g choy sum (chinese cabbage), finely sliced
  • 1 spring onion, finely sliced
  • ¼ cup coriander leaves
  • Cook for 2 more minutes then serve.
