Stir Fried Squid with Lemon and Ginger

Ingredients
- 120g calamari rings (not crumbed)
- 1cm ginger, peeled and thinly sliced
- 1 medium zucchini, thinly sliced
- 1 cup sliced mushrooms
- 2 teaspoons lemon juice
- 1 small chicken stock cube
- 1 tablespoon soy sauce
- ½ cup water
Method
Heat wok and stir fry zucchini and mushrooms. Add ginger and calamari and stir fry for 2 minutes. Remove from wok and keep warm. Mix together remaining ingredients to make a sauce. Pour into wok and cook quickly until slightly reduced. Serve over the calamari and vegetables.
