Lamb and Vegetable Curry

Ingredients 

  • 120g lamb fillet, cut into cubes
  • ½ cup chicken stock
  • 1 carrot, chopped
  • 1 zucchini, chopped
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 1 tablespoon curry powder
  • 1 teaspoon fresh ginger, grated
Method 

In a non-stick pan splashed with a little water, gently fry chopped onion, garlic and ginger. Add curry powder and stir. Add lamb, stir and continue to cook over medium heat for about 5 mins. Add chicken stock and chopped vegetables. Continue cooking until vegetables are cooked.
